Chocolate Amaretti Torte. Yum!
I love this recipe. You can eat it at room temperature for a softer texture, or serve it cold and it gets dense and fudgy. I have no idea where I got this recipe, but I thank the original creator. You just can't get any better than a recipe this easy. And don't feel guilty about eating it. Look at it as having lots of "delicious points" rather than calories.
Chocolate Amaretti Torte
Preheat the oven to 350 F.
Butter an 8" cake pan, line it with parchment paper, and then butter the paper.
1 cube butter (8 tbsp)
3 eggs
1/2 cup sugar
Place above ingredients into a food processor and process for three minutes.
4 oz bittersweet chocolate, melted and cooled
18 amaretti cookies (the small ones) ground
1/2 cup ground almonds (Trader Joes sells almond meal, which I used)
Combine all the ingredients.
Bake for about 30 minutes. It should be a little soft when done.
Try it and let me know how it comes out. I am making it tomorrow for the second time, so hopefully it is as good as the first time!
